Sweet and Savory Cantaloupe Salad

Servings 1


  • 2 cups lettuce, leaves torn
  • 1 cup fresh cantaloupe, cut into one inch pieces
  • 1 tbsp fresh basil, leaves torn
  • 1/2 tsp fresh thyme leaves
  • 1 tbsp olive oil
  • 1 tbsp white wine vinegar
  • Salt and pepper to taste


  • Line a plate with lettuce. Nestle cantaloupe cubes in the center of lettuce. Scatter herbs over the salad, and then drizzle with vinegar and olive oil. Finish with a couple shakes of salt and a generous grind of black pepper.
