Ripe cantaloupe, fresh herbs and a drizzle of white wine vinegar and olive oil  over lettuce make a cooling combo on a hot summer night.

Sweet and Savory Cantaloupe Salad
Serves one

Two cups lettuce, leaves torn
One cup fresh cantaloupe, cut into one inch pieces
One Tbsp fresh basil, leaves torn
Half teaspoon fresh thyme leaves
One Tbsp olive oil
One Tbsp white wine vinegar
Salt and pepper to taste

Line a plate with lettuce. Nestle cantaloupe cubes in the center of lettuce. Scatter herbs over the salad, and then drizzle with vinegar and olive oil. Finish with a couple shakes of salt and a generous grind of black pepper.

Dinner is served!
